How it all began

The story of Coookies began in 2025 with a “What if it works?”. During a phase of career change after 20 years of employment, I just couldn’t get the idea of a cookie shop out of my head. What followed were countless recipe tests, poring over cookbooks, researching blogs, baking, adjusting, and baking again. Eventually, after numerous attempts, the base recipe was ready. At the same time, I worked on the business plan and embarked on a journey through the bureaucratic jungle of required permits, regulations, rules, and exceptions. In October 2025, the decision was made to start with a pop-up café. At Lange Reihe 113 in Hamburg, a 4-month cookie pop-up was created in the premises of Luicella’s ice cream parlor. And the customer feedback was so positive after just a short time that the decision to build a permanent business was an easy one.
